Wolverine's healing mutation isn't active all the time. He actually requires soaking himself in blood (thus the claw mutation) to keep it going. In this universe he quit popping his claws. No more bloodshed, no more youth.

Adamantium retards his healing factor due to it being extremely toxic. His healing factor ends up wasting alot of effort on making sure Logan doesn't die from adamantium poisoning.

Basically this, as far as we can tell. With just his bone claws and normal skeleton, he could have lived hundreds more years (after all, he was born in, what, the 1800s? But keeping him alive from the adamantium means he will effectively age at a normal-if-slightly slower pave.
Of course, this is a fairly new development, and one one the films only just seem to be taking on.
Interestingly, Laura (unless just her claws is enough to poison her to the game degree) and Daken should still be around in a couple of hundred years seemingly unchanged.
At least it gives a decent reason why Jackman has been visibly aging over 16 years of cinematic X-Men.

I like him well enough. I do think he has basically monopolized the franchise though, admittedly in the same way he often did in the comics, and we'll have to see where it goes once he has retired.
To be fair, if retirement turns out to 'not be for him' at least Old Man Logan sets the precedent that he can age now.
I do want to see X-23 on the team eventually though.

Remember, that's not supposed to be all that long after The Wolverine or X3. A decade or two at most, and they gave his the beginnings of grey hair. Aging slower, that still fits. It's a bit off a mess anyway, continuity errors out the out, not least of which my he has metal claws again.
