Is there any better example of a series that struggles to hold up under the weight of its own continuity than X-men?

I cant think of many x-men continuity problems, unless you mean the time traveling characters like Cable or Bishop.

That's only a problem if you assume that they're being written at the exact same time, and most comic fans just assume that unless said otherwise, it will be revealed later on exactly where it fits in on a timeline. Seriously, how did you make it through the 90's with Wolverine basically being in three places at once every month?
