If she decided to fight the Bot? Not a chance, the Bot had several upgrades at that point and given it was able to defeat the equivalent of supes and other op heroes (one of the dossiers had a guy manipulating gravity/radiation/black holes can't remember).
But for the sake of discussion let's say it was one of the earlier models since it's obvious defeating Mr. Incredible was the passing test, while she would had a chance it's almost certain that she would had declined due being happily married and having children, so it would be another kind of movie, with Helen going all spy on these people that are able to track supes, she would discover the trail of missing supes and the clĂmax would be in the Island lab against a early, but deadly omnidroid and a more dangerous Syndrome having all his toys at his disposal (picture something like Arcade's muderworld) and of course a lava death for syndrome
