Amedot is the only one that makes sense to me since both parties interacted quite a lot and their personalities and color schemes mesh in a fun way. It helps that unlike both Lapis and Jasper Amethyst is a pretty nuanced and developed character.

Well if the show's at least partly targeted towards children, and children basically give zero shits about anything like that, it helps to increase overall appeal by having at least one major character be of the opposite sex of the predominant sex of the overall major cast. That way boys can have someone to relate to in a show dominated by women, and vice versa. Steven being the protagonist helps to dispel the "girl show" angle that could turn off a lot of the younger male demographic, and ratings seem to indicate that it works, as there's not much of a gender divide at all in SU's ratings.
Obviously since we're older we get that a show with a primarily female cast isn't necessarily exclusively targeted towards them, but kids actually do care about that kind of thing.
