My guess is probably a combination of that and the mostly vegetarian meals. A huge chunk of India is vegetarian and is used to that sort of diet, but for most Americans, who ate meat whenever we get the opportunity bc it's delicious, it's hard on our stomachs. Trying to go vegetarian or vegan for even a little bit will fuck up your stomach good for a little bit.

It's not the quality of the ingredients, it's the fact that no one washes their hands after going to the toilet over there. Or if they're fresh immigrants/poorly educated, which is why I never eat at Indian restaurants around where I live because they're all staffed by literally illiterate peasants who were shipped in to be essentially slaves and vote for a certain political party.
Indian food itself is pretty damn good. My dad makes the best curries I've ever eaten.
