Listen, I really like Steven Universe, but the fight scenes aren't very good.
Besides, this was a copy of a fight in Utena, which also has pretty bad fight scenes.
I'm assuming you mean western cartoons only, since there's a shitload of anime fights that are better.

I was cool because the show built up how great of a society Galaluna was, and also how badass their military was. There was a lot at stake because the Traitor's minions were running toward the royal palace to seize the King and Princess while Lance is the only one in the area aware of it. Meanwhile the planet is being torn apart by heavy fighting all around this duel, people are dying by the truckload, and the real villain has yet to reveal himself. So Lance has to defeat an experienced veteran who is much better than he is despite in a short amount of time to make it to the palace and rescue the royal family.
And he does it with a combination of sheer luck and inventiveness! Not to mention the Traitor meets a fitting end in a way that's pretty graphic for CN.

Not only because of the animation, but for the build up and themes as well.
Also, Legend of Korra might be pretty bad. But any fight in that show is better than every fight in SU.
