Nah, they're a mixture of fat and muscle, though a lot of them just get fat when they get old - remember that Jabba couldn't move at all without assistance in the OT. Though I've heard that in EU/Legends there were some mentioned who had a genetic disorder that left them unable to get fat at all, which fucked them over.
Anyway, I think of them more as seals/seal lion in terms of how might move, since canon is a mess of pseudoscience and speculative evolution is more fun.

Yeah, though apparently there was actual concept art for it, but it was less "art of something we intend to do" and more "we're throwing ideas around." MSW still treated it as if it were actually happening and talked about being told by reliable sources that Peter Mayhew was wearing a blue glove/sleeve on-set.

-Several Hutts would be in the movie, and the source had actually seen them being built
-Adam Driver would be playing a descendant of Count Dooku
-Luke was guarding the tomb of an ancient Sith Lord (this one was partially responsible for what eventually mutated into the Plagueis rumor that still won't die)

It apparently worked, because people were insisting MSW had been 100% correct about TFA. Even their trailer descriptions were being hailed as being completely accurate when they were usually filled with such vague descriptions as "a shot of the Falcon flying" that their accuracy was largely based on educated guessing, and they still had a bunch of shot descriptions that never happened.

So, GoH anons. Been fucking around with AoE status effect build. My results have been nice. Probably the most fun build I've had so far. I get so many stacking debuffs it actually makes it confusing to see what each enemy actually has for debuffs.
So far I run Lumi as leader for the evasion and minor healing. Then Vader, Sheev, IG-88, and HK-47. Just lead with AoEs then target people with IG and Sheev's heal block on priority targets and finish off with Vader's Saber throw (it gets a bonus for each debuff on an enemy). If you got luck with ability blocks you can even prevent healers from doing shit about the damage over time.
It's fucking fantastic, and I don't think I've seen anyone in my block running it. Most of my fuckers are only 4 star, but it's been kicking the ass of anything I've run it against so far. Only thing I think it'd have trouble against is any team that can dispel debuffs.

It's either Sidious or Luke that messed him up. The idea presented with the concept art was that it was the dark side corrupting him, but that isn't set in stone, and since he's clearly terrified of Luke coming back I could see them going with "Luke rocked his shit" as an explanation for why he looks like a half-melted Voldemort.

Apparently he is according to canon, since the nature of the Sith is that they would get stronger with each generation. If we're factoring EU Sith it's a hard sell- the EU itself stated numerous times that Sidious was the most powerful, but a lot of them were ridiculously overpowered so it's one of those things you just need to take their word for because it doesn't hold up under scrutiny.

The lightning fucked him up. Wookieepedia had years-long edit wars about this because even though all official sources and even Lucas himself said his face was the result of lightning damage, they couldn't let go of Dark Empire's explanation that he was pruney because of years of OD'ing on the dark side.
Imagine the whole "toy package confirms Jango is Mandalorian!" thing only magnified. They were taking lines from the novelization and vague points from the visual dictionary and using them as CONCRETE PROOF that Palpatine was using a Force Illusion power and/or had used Sith alchemy to change his face ala Snow White. They eventually came to a weird compromise that had no basis in fact, where the wrinkling and such was due to lightning, but the pale skin was clearly always there and the lightning just made him drop the illusion. There's nothing in any reference guide, interview, etc. to support this at all but they absolutely couldn't accept that Lucas's word could ever trump Dark Empire.
That's not even an exaggeration, the big butthurt cry was "BUT THAT INVALIDATES DARK EMPIRE HE CAN'T DO THIS"

Two battle droids also picked up his body and took it with them on a separate escape pod.
So you see, Dooku was able to keep his head preserved long enough for it to be attached to a working droid body.

2010 General Grievous from The Legacy Collection is a good buy, and The Vintage Collection(which is slightly updated and has more accessories)version of him is even better. He's definitely fun to play with too, albeit fragile. Also watch out for his shoulder plates and arms, which are prone to breaking. But to find one at a price that won't break your bank is going to be a rare one.
