The gems from SU have pretty much identical tech to Star Trek, it's weird how consistent it is. For example, if you wanted to explain their bodies (like holograms, but with mass) you can look at the holodeck and how it generates fake matter (photons and force fields). I'm not Rebecca Sugar or anything, but my take is that it's an incredibly dense cloud of photons oscillating in perfect unison. They exert an outward pressure constantly bouncing off of the field containing them, which creates an illusion of a solid surface, as photons impart energy into things that reflect them. The shape of the field is dictated by the gem, and the gem also recycles deenergized photons that bounce back inward, keeping up the pressure. Severe destabilization of the field causes it to collapse, freeing all the photons in a brief "poof". The poof actually releases a small pulse of high-energy photons, which could be dangerous to living organisms. Reshaping and combining the fields is incredibly easy.

Their gems project the stored matter into the form of a body or a tool and the form is maintained by the gem. If the item gets too far away or if their body is seriously disrupted then the form loses stability and the matter vaporizes.
