Cartoon Network is kinda hell to run when you think about it. They have tons of original properties they need to balance and shift around based on ratings. it's like that with all the kid-centered networks really. They use their own shit mostly and don't just get stuff from fox or whatever like Comedy Central does.
Then you have the fact that cartoons require completely different planning limitations. You can expand or chop up a cartoon much easier than you could Game of Thrones. Even sitcoms have to worry about live production while cartoons really just need time to make (outside of South Park).

Harvesting seems to be what Peridot was afraid the Gems were doing with the corrupted gems.
But really they just want to be able to cure/help them rather than kill them.
Though, since there's a future episode called Gem Harvest, I imagine we're going to find out what Peridot was so afraid of at some point.
