I always kind of wished that they could've done some winter/snow creatures like the Yetis, Jack Frost, or the Krampus, or even more obscure creatures like Yuki-onna or the Qalupalik. I know that's a weird thing to ask for considering it takes place in the summer though.

I always kind of wanted to see the protag from this or a parody of her, at the age she'd be in real time since it aired, as a hunter chasing after the Arachne in a show like this in general. Just think it would be a fun cameo.

I wished they would have done a proper mystery story for once.
I don't think there's a single episode, that, at its core, is about finding out more about strange happenings and solving .them. That aspect always played second fiddle to something else.
The closest thing we've had was that one episode with the wax figures and that was just an ordinary murder mystery.

I would want to see Mabel spiral out of control in California, as she realizes that Smile Dip can no longer satisfy her. In desperation she turns to her dealer "Not Soos" who gives her the next step up, pure Colombian Cocaine.
Mable starts to go to greater and greater lengths to sate her addiction, first stealing from Pacifica's family vault, then selling off Dipper's Ghost Harassers DVD box set. She starts to lose contact with reality as a result of her withdrawal, and in a psychotic break, kills Not Soos, who in a shocking plot twist, is revealed to have been Soos all along.
Mabel goes to prison, where she must team up with her former rival Lil' Gideon (who is himself in prison following a charge of Grand Larceny from stealing an industrial tanker of hairspray). From there, they must become the top dogs of the prison, and organize a way out. Luckily, an old friend has been waiting for them to make a deal...

I wrote a gravity falls spec script where a comic book convention rolls through town and the twins are super excited. They convince Grunkle Stan to go because they find an extremely valuable comic in his possession that he thought was garbage.
Anyway, at the convention, they start getting attacked by an ink-drinking vampire. I think that would be a cool concept.

What about a crow cryptid
Gideon turns a flock (or murder) of crows into kids (around 12 yrs) but they don't listen to him. One of them is Thompson body style constantly eating corn, a leader, and a girl.
S1 would be them order to steal the dead, S2 the book. Either way they fly off and becomes the new trouble makers of Gravity Falls. Calling the Teens old news. Ultimately leading the Teens to challenge them to a tagging contest. The Teens are dangerously outmatched as the kids have black crow wings, and get unbelievable spots.

But an idea: You said Ford befriends a manotaur, so perhaps it can tie in with these "girly" skaters following Stan's lead and toughening up to win and Ford and the manotaur could stumble upon the scene by the end and witness how the supposedly weak girls can be tough too. For Ford and the manotaur, perhaps you could have it be a manotaur who is an outcast for some reason so Ford can relate and the two work to try to "toughen" him up so he can go back and be accepted?
