Military men aren't at all shy about profanity, and they in fact are quite inventive when it comes to inventing new obscenities when the old ones lose their bite. Actually, Cap was a very nice kid who became a super solider, I remember a line in the film wherein the doctor says that Steve is the perfect pick because he's not a jarhead like the others in the program. Cap also being the face for the modern army in WW2 means that he's the public image, you don't want some foul mother war mongerer for that role, you want a babyface. Not to defend Whedon too strongly, but he was also still pretty wet behind the ears as far as the whole "superhero" deal went and had no idea what the hell either he or Obadiah was doing. The Hulk fight is against an opponent he's more familiar with, and he has a few years of experience under his belt, makes sense that he wouldn't be AS tense.
The worst line from the film has to be the part where Tony goes all "OH NO, CAP'S THE LEADER OF THE GROUP, I JUST GIVE US ALL FUN GADGETS AND PROVIDE US WITH TRANSPORTATION AND A HOME BASE IS ALL"
