Again, shows on the same network don't compete with each other. That's the reason there's traditionally a "new episode night" when they show new episodes of several shows at once (currently Thursdays). Playing a new episode of an established show right before the premier of a new show is a good way to get the established fans to take a look at the new series since they're already there.

I heard someone say that the way the, off shore animation studio, animates the show is like progressive groups. They say, technically, it takes 9 months for an episode to go from concept to air, but its more like 9 month for this group of episodes to be completed.

Gravity falls finished its show, adventure time continues to spit out episodes are a regular pace. Honestly the only shows I know that are being stupid about hiatus is steven universe. Rick and morty and star vs' finished their second seasons, so we are waiting for the next jump to season 3 which is normal to take a while, but it shouldnt take this long between episodes DURING the season.

While Season 3 was announced in July, the actual season didn't start recording until probably December. In November, Zach posted on instagram that they recorded episode 100. Season 2 will have 52 episodes. By the time season 2 is done airing, 104 episodes will be out. They're probably still recording the first half of season 3 right now.
