While it's true that theories that include absolute statements cannot be 100% proven to exist as a scientific theory something must have scientific proofs backing it.
So while things like gravity and evolution can't be "proven" in an absolutist sense because of the possibility of emergence of new data they still need to be proven by the data we actually possess.
If you look at every swan on earth and find it white you can say that the theory that "all swans are white" is proven true even if still exist the possibility that there is a black swan very good at hiding. That doesn't make the white swans theory not proven. It just make it false if the black swan is actually found.
