It could either be biological based (hard, since it would require a lot of care) or some sort of nano machine mesh.
What she is saying in the second part implies that she used something similar to stem cells and made certain areas have specific emergent properties (meaning the whole part can do more than what a single element can, Google it for more info).
It could mean that there are lines of extremely flexible nanomachines that can fold on themselves,other areas that can become rigif, and an area that acts as a sensor, so it would explain why it folds and stays folded.
