I never got why she was in love with Chowder of all characters. He was fat, stupid, and sometimes annoying. Why him? I guess you could say they were the same race and she didn't have a choice, but almost every time they were on screen she was looking at him with lust in her eyes, not to mention talking about how many babies she wanted.
I'm surprised she still got what she wanted, 50 babies and Chowder as her husband, in the finale.

I don't think I've ever seen him state anything on the finale, I don't see why it wouldn't be canon though.
The closest I've seen to it not being canon is the credits of the finale, where Chowder states he had a crazy dream that took place 20 years in the future, but then it turns into some Inception bullshit, so really it's up to your own interpretation.

There wouldn't be a point to saying its non-canon at this point. It's been 5 years since that episode aired and mostly everyone says that the end of it. Saying it's non-canon at this point would mostly be falling of deaf ears.
But that episode seemed "too real" for it to be non-canon. It at least wraps up the series nicely, I can't really see another ending. Maybe Carl wanted an edgy ending where Chowder goes into a diabetic coma and dies, and Panini jumps off a cliff. IDK
