The current trend in animation is homages to pop culture, as the people making cartoons today grew up in the 90's when cartoons were just starting to do that. Now more than ever, content creators are not only aware of their audience, they have the ability to engage that audience thanks to the internet. Then, they find out about the person who inevitably did fall for it, presumably because of the internet. Then WE, the viewers, find out about that, and can appreciate the show and the people behind it more, thanks to the internet. It rarely adds to the story or plot, but it does serve to get a laugh and make the show memorable. "Hey remember that Illuminati reference? I almost spit my drink lol"

Illuminati symbolism is part of pop culture. Gravity Falls just takes it to a whole new level because that show is about urban legends and pop culture (and because Alex Hirsch is a god-tier troll, and I imagine the rest of the storyboarders/writers are too).

TL;DR Artists are nerds and trolls, Illuminati symbolism is them having fun and connecting with an audience in a way that ironically humanizes them.

And to OP I think it's a joke between artists who work on the shows (creative people will be more likely to notice things like that and use it) but eventually when this generation of kids grow up some will be curious enough to research into why the funny triangle showed up in all of their programming and music videos, like some of us did- it's been going on for awhile. We'll see what happens, might be even more of a joke in the future, might not.

There are people who support Donald Trump, and do so with intense faith. They believe in him very much. There are people who hate Donald Trump, however give him lots of exposure, which actually empowers him greater and his group of believers. Even when you do it in joke, any moment you actually bring up the name, you are empowering the Meme, and The Idea of Donald Trump. Parody, Joke, Trend, Topic, Negative Talk, Positive Talk, Faith, this all empowers an Idea, even if its not your purpose to have done so.

Therefore, its worrisome, because of the extra exposure, empowering something that is meant to be laughed at, and locked away in a realm of dreams.
