Death Stars accomplished one of their goals, but not on a big enough level to be worthwhile. Blowing up Alderaan certainly put fear into people, whether Rebel, Imperial or third party. Of course, this caused some Imperials to defect, which is a negative thing. Second Death Star just being a thing put massive fear into the Alliance High Command, where they had to throw all their resources at the second Death Star just to avoid Chandrila and Mon Calamari from being BSD'd and blown up.
Still, it doesn't equal blowing up the Senate, entire New Republic fleet and the current capital of the government.

No. The circumstances for that in TCW was to showcase how the war effects multiple places in the galaxy. Rebels is only focusing on a small outer-rim band of rebels that has no reason to keep planet-hopping for more than an episode, if they have a semi-functional base set up. This carries through to the rest of the Rebellion at large, where they settle in one place until it becomes compromised, scout for a new place and stay there as the cycle repeats.

The force of this pushes out into the full New Republic fleet and the planets nearby, destroying the former and making the latter instantly devoid of all surface life. It also turned Hosnian Prime into a sun, which the movie didn't really show.

No one is saying it can't cut metal, however it's been shown when cutting through large chunks of metal, like doors that seal off a bridge, that it takes some effort to do it, the lightsaber doesn't just slice through it like it isn't even there. The legs of the AT-AT are very thick, and made of very dense metal that shrugs off blaster shots with ease, that shrug off anti-vehicle weapons fire without any noticeable wear. If cutting through a door that's only designed to close requires some effort to cut through, then something like the galaxy's equivalent of heavy tank armor shoulder most certainly require it as well.

Since it's protecting the bridge, the most important part of the ship especially from the viewpoint of the Neimoidian leaders on said bridge. He's only menacing when he's wearing his mask, like when he hunts Rey on Takodana or when he massacres the Jakku village or Luke's Jedi academy. Its not uncommon for a character in the Star Wars universe to know multiple languages, especially since Rey grew up on a planet filled with various aliens and if her memory was wiped like many suspect she probably learned the droid language then, or she read it in a manual she found. It doesn't really matter because Finn was the only character in the movie that didn't really understand it or Chewie and that just most telling of his background than anything else.
She misses more blaster shots than she makes. One miss close range, two misses from far away, and only makes two very close range shots. She also struggled turning the safety off and got kidnapped in that very scene.
The way she talks to Han it's clear she had worked with the various ships before and that she was even there when the compressor was placed in the falcon as she out right states she opposed it's installation.
She was able to use the mind trick because of how the force is meant to work in the OT vs the PT. Her faith in the force is what drives its power and Rey shows an almost child like fascination and love for the force, Luke, the Rebels, and those stories. She has an unwavering faith in the force itself and she only wavers because she was confronted with the a life outside of waiting for her family on Jakku. Something she never wanted.

It's possible. Lords of the Sith deals with Vader's armor early on. He's described when meditating with his helmet as being in constant pain and aware of his missing limbs UNTIL he seals his armor completely. Then he feels whole again. Whether it's psychological or somehow a design of his armor, well, I don't know. Either way would be interesting.

It plays into the idea of the old self dying and replaced with the new one, when Vader takes his mask off at the end of Jedi it's a very literal image of showing that he is once again Anakin Skywalker. I think it's both. He didn't execute Finn on Jakku even though he knew that Finn didn't murder any villagers. But I also think he sees visions or force ghosts of Anakin and/or Vader. Kylo asked Vader's helmet to "show him the power of the darkness again" which implies that he had some kind of vision or flashback, like Rey when she touched Anakin's lightsaber.
