Humans have made themselves nearly immortal, and are powerfully telepathic/magical. They've created various castes of animal derived hominids who are as intelligent as humans but are held to have no rights at all and are used as basically slave labor. The humans however are intensely, intensely bored, and will often don a ceremonial robe that makes it legal for animal people to retaliate against them and attempt to cross the animal territories. Some try to run by stealth, some wade in to slaughter and create havoc. The story would be about various groups of both humans and animal people dealing with these hunts, raids, and battles (depending on the number of humans involved) and trying to figure out a way forward for both.

How about using the animal-peoples to represent certain now-dead cultures? So it's still a "generic fantasy setting," but done in the Tolkien model where it's all based on fact.
So you have a badger people who are Anglo Saxon, Wolves who are Franks, some extinct species as Romans/Byzantines (who are already dead).
Humans can be the progressing race that's destroying these others, but it's less a "HUMANS SO BAD I WISH I WAS A CAT" thing and more just an allegorical take of the passage of time.
Either that or just have one animal species, but instead set it in the uneasy period of a truce after a long war.

100 years ago the earth was under attack by aliens.
humans where fucked, until they came up with a solution, creating super soldiers by infusing them with animals DNA creating super furries vs aliens
So we got furries of all kinds and sizes fighting for mother Earth turning the tide of war, the best of them all was THE SHARK LEGION!!! Shark soldiers who single handed manage to bring down the alien mother ship and save the fuckin day!
So the earth is saved and as the world rebuilds, the super soldiers are asked to return back to their human form.
They all agree, except for the fuckin SHARK LEGION, who love their new bodies and say fuck no to being human again.
So conflict happens and the military and the SHARK LEGION fights each other, the SHARKS end up escaping into the ocean and the military can't afford to go after them so they disappear into legend.
then 100 years later, the SHARK legion is found again, they have made a home on a new volcanic island and have increased their numbers.
So the actual series is about humans and SHARK people interacting with each other and fighting each other while the main characters seek to find a way to have peace between the two races so they can ready themselves from a second attack by the aliens..

I liked how Final Fantasy IX did it, where humans and anthro rats are for the most part the rulling species but you've still got several animal species living quite confortably in human-ruled cities.

Maybe have the Alliance compromised of various kingdoms of anthro and human kingdoms, who Allied to fight a larger threat. Though in general amongst the kingdoms, they hate one another equally, viewing themselves above working with those that aren't their race.
There are other kingdoms composed of already present races that are elsewhere in the world, say Grizzly Bears and Polar Bears, and they are usually friendly amongst those of their species. Species that live close together sometimes meld into one kingdom, so Black Bears and Grizzly Bears live together under one banner.
Steal the plot of Banner Saga and have humans/animals unite to take on animate suits of armour that somehow fuck and have offspring.

So it's kinda like a Gate scenario, only the other world that got invaded by the humans are the medieval fantasy animal-folk. Make it so that initially the humans entered the fantasy land on some kind of ancient ruin, then they encounter the standard fantasy tropes. But the further the humans go, they find out it's getting trippier and trippier, kinda like Elder Scrolls. In fact, if we're speaking in Elder Scrolls analogue, the humans landed on Skyrim, progresses into Cyrodiil, and then things went full crazy once they meet Morrowind, Black Marsh, and Elsweyr.
And have the humans be African warlords from Somalia, Rwanda, and Liberia.

What if its a sci-fi setting, where after a world war scientists make every animal on earth human-like, so after the war everyone has to adapt to a world without non-sapient species left to prey on, except bugs and vegetals, but that isnt enough to satisfy the hunger of lion people or bear people, so murder becomes a big issue in the cities where you cant walk through an alleyway without expecting some tiger guy jump at you and try to eat you.
