This. The Jedi never just steal a kid from their crib in the middle of the night. They speak to the parents about their child's "gifts" and offer them the opportunity to allow the Order to train their child's gifts to a point where they could make a real, good difference in the galaxy. They don't take them as infants either but rather as young children(once basic motor skills have been developed), which is noted in the "Children of the Force" arc as well as that one flashback where Plo Koon finds Ahsoka Tano as a young child - cognizant of her surroundings and standing on her own two feet.
Even then, the parents always have the choice to decline. The Jedi will warn of the risks and implore otherwise, but they won't insist or impose.

Leaving Force Sensitives, especially children, out of the hands of the Jedi seems like a really bad idea. All it takes is a few things to go wrong before some kid Force Chokes his entire school because he had no one to guide him.
Also, there's very little choice involved when an institution, backed by the government, comes knocking on your door and asks 'permission' to take your children. I don't even hate the Jedi, but when powerful people give you a choice, they're pressuring you without even needing to.

You'll never be able to properly tap into the Force without the training to do so, hence Qui-Gon's saying when Anakin learns to "quiet" his mind, he'll hear the Midichlorians speaking to him. You don't just 'get' to be able to use the Force once you're deemed Sensitive, you need to actively learn it from people who do. Otherwise, you'll just be left with heightened awareness and reflexes to take advantage of. This ties in to one of the more interesting stories from the EU, with the case of Baby Ludi. After some huge disaster, there's a baby that's found and the Jedi realize she's Force sensitive and being an orphan, take her to the temple to be trained.
Except things get complicated when her mother turns out to have survived and now wants her baby back. The Jedi are reluctant to do that because they say the baby's mind has already been awakened to the Force, and giving her back now could be dangerous. It became this big media sideshow, but then it got overshadowed by the Clone Wars breaking out.

I will agree that the removing of attachments is a little harsh, but as said before, it has precedent in that taking some of those attachments too far can eventually lead you down the Dark path. Granted, teaching attachment in moderation with consideration of the implications toward yourself and the world around you would have been a much better way to go about it, but the point was that the old Jedi were ever vigilant against the Dark Side because it would always have the very real power to become a considerable threat after the New Sith Wars(until they were made blind to its workings), and so the tenet was established with that in mind.

They didn't even have that option. The Sith are the sworn Empire of the Republic and Jedi. No one wanted them to come back and make another Empire. They had to enter the war because the Sith were involved and the Republic likely didn't have that many people knowledgeable in war tactics like them(canonically they fought wars against the Sith in the past). Notice how clones filled the ranks of ships and usually only a few leaders were regular humans like Yularen.

They had no choice once they found out Count Dooku a Sith Lord was in charge of the Separatists. Once Dooku became the leader of the Confederacy the Jedi had no choice in the matter. They couldn't just say, "Well this isn't our fight", because at that point it was their fight, it was the Jedi's duty to fight Sith and Dooku forced the ball in the Jedi's court and Chancellor Palpatine forced them to play it.

Huh? None of the lightsaber combatants were very experienced with the lightsaber. The only one who did relatively well was Kylo as he showed some evidence of Prequel-era Jedi training while treating his weapon as more of a European claymore. It didn't 'throw out' anything. Finn and Rey were not experienced duelists which is why their fighting was sloppy, clunky and for the most part strictly reactionary.
