I understand that shipping is a thing but I really don't see the point of it outside of porn. If there's a canon ship between two characters made by the creator I won't argue with it, but if I like it or not is debatable depending on the ship. Fanon ships however is just an oddity to me and I only see it as a prime source for cringeworthy (or hilarious) art.

That's because people have a tendency to get emotionally invested in characters they can relate to or like, even if their imagined ideal relationship won't become canon. The problem lies in that emotional investment too, since people tend to get upset when the work's creator develops a relationship they don't like or didn't envision. But that doesn't mean that the creator always knows what they're doing too, so it's sort of a trade-off.
