I just recently started researching it. I'd say that it definitely aged well. Third season is GOAT.

this is my favorite animated show, i fucking love the atmosphere of this show.
It aged very well and ended on a high note; I dunno why anyone would want a reboot.

Try not to binge watch it. It works better in small doses.

I'm curious about how the writers never made Ed annoying. With stupid characters like him it's usually very easy to make him a jerk but the writers always made him likable.

I think a comparable example would be Patrick from Spongebob. Patrick was rhe Ed of that show in the beginning, the lovable oaf, but nowadays, he is a douchebag for no reason in half the episodes. Ed, on the other hand, is almost never mean, and if he is, it's for a reason.
