I don't think there's a satisfying way for her to survive the series. He wanted his waifu to share some spotlight but she's in such an important position that the only way to explain her absence in the OT is to kill her. If the OT claims that after Yoda, only Luke and Leia were the last of the force users, then that would be a mistake on the OT's part because the force isn't exclusive to the Jedi or Sith. There are most likely many force users out there that are hiding in plain sight that the OT never mentioned. It wouldn't be unlikely at all that there are many surviving Jedi besides Luke that just went into hiding.
I'm sure that the rebels were not only fighting the empire from one front, but that all over the galaxy, there were many rebel insurgents reclaiming territory against storm trooper forces. That could be where many force users/jedi had been in the OT.

There is a chronological order and the order in which they aired the first time around. I'd probably recommend watching the chronological order because otherwise it gets confusing. There are prequels and sequels to episodes from different seasons all over the place.

That might pick up with TFA's release, but it's hovering at around half a million viewers an episode. Which may be due to Disney XD being on a separate cable package, since shows like Ultimate Spider-Man are pulling in lower numbers, while Phineas and Ferb pulled in numbers much higher and much lower.
If it weren't on Disney XD, I'd compare it to Clone Was, but Cartoon Network's on practically every cable package. And it never had a single episode that dipped below a million viewers.
