Adventure Time was never going to be that kinda show, and it was obvious from the beginning. I don't think the show has an endgame in mind to be honest, aside from maybe having Jake's croak dream finally come true and Finn has to deal with that. I can't think of any other way of showing how he deals with life and death (one of the show's central themes) that would be a big enough deal to go out on.

Sweet P himself is kind of boring and it's obvious they're just shelving the Lich for the next season finale but I still think it's pretty beat how they beat the undead villain by bringing it to life.

Bubblegum went from basic love interest to too old, to just the right age, to obsessive and methodical to sociopath.
Jake went from goof sidekick to big brother to thieve to father.
The lowest blow they did was bring Prismo back, but I don't think they are (or at least weren't) afraid of doing changes.

The way they did it was alright but it was really blatant that they're afraid of doing anything big with the plot, even for minor characters that showed up fucking 3 times like Prismo. Not even chumps like him or Root Beer Guy can get killed off and fucking stay dead.
If you look back on it they're rendered all the meaningful things from Escape from the Citadel completely pointless. Bravo Adventure Time.
