So what I'm gathering is that the Eye of Agamotto either is or holds the time gem inside, and that the gem can be used to travel to different timelines, including timelines that branched off before the physics rules were established, and so appear to be different dimensions.
He can also use it to go to slightly different timelines where the guy who shot a bullet at him made the decision milliseconds before so he misses, thus effectively controlling 'probabilities'.
At least that's the only way I can see them justifying Strange's adventures with only the time gem as an explanation.
