Extend the time spent in the forest, I really liked that half of the volume, so maybe give it a more comedic tone to it, here's the team that will RWBY and JNPR, so play around with them. Make it almost seem like a few episodes from RvB; have everyone screw around and argue about nothing for a few laughs.

Ruby and Weiss don't solve their problems in a single day, this arc has a longer time period. Explore Weiss' frustations on Ruby's leadership, and Ruby taking said position for granted. Blake and Yang also chime in on their opinion: Blake is indifferent to Ruby but very much against Weiss, while Yang is just trying to make peace all all around.
Ruby ends up struggling with her leadership role, and Weiss feels like she should be happy about this, but she ends up not. She still talks with Port before the overall same conclusion is reached; that she needs to be a better teammate while Ruby learns that being a leader doesn't mean that she by default excellent at everything and needs her team to grow.
The bully arc is more or less the same, but NPR play a much more active role, with the revelations of the fake transcripts being saved until later, so most of the story is on NPR trying to figure out what is wrong with Jaune, who is having trouble with being a leader, feeling he HAS to do everything on his own. In the end they come to his aid against the Ursa Major.
The last third puts more time into exploring the social issues between humans, faunus and their relationships, and the White Fang's history to a greater extent. When Blake runs away, we actually see Weiss' thought process on the issues, as well as better explore what Ruby and Yang think.

On top of narrowing the focus to just our main characters, it's appropriate considering they're supposed to be hunters, who would naturally operate on the outskirts of society.
That's always been a huge dilemma for me. For an occupation that's supposed to deal in fighting the wilderness and it's beasts back, all of the main characters have struggles that are explicitly societal/urban. More fight scenes have taken places in cities than the wild, which makes the grimm seem much less important to everyone involved.
