Here's a Guide I made.
Protip: It's not called EU anymore, just Canon/Legends.
Recommendations:
First and foremost, the Cartoons. TCW came directly from George, and Rebels is brought to us from Dave Filoni, who Lucas has called his IRL Padawan.
They heavily expand on the characters and worlds established in the movies, that didn't get enough attention. Especially TCW.
Then Comics. Thankfully, we are literally less than 1 year into the Comics, so there isn't much at all to catch up on. You could probably read it all in a few hours.
If you want recommendations however, then Vader/Kanan/Star Wars are ongoing and are probably the most important.
Son of Dathomir gives us a little tease of what happened to Maul after TCW (but still leaves it very open ended, so dont go in expecting a climactic end to his story)
Shattered Empire connects Episode 6, the Uprising game, and Aftermath, all together, and gives some small nods and connections to TFA.
And then books.
Lost Stars is high up in everyone's recommendation list. It essentially retells the OT from the perspective of some Imperials and Rebels, and climaxes with the Battle of Jakku, explaining why its a junkyard in Episode 7.
Lords of the Sith gives some much appreciated expansion on Vader and Sheev, as well as more from Cham Syndulla, a character from TCW, and Hera Syndulla's father. A New Dawn is a good book to start with too, as it is a prequel to Rebels, as well as an expansion on the outcomes of the Kanan comic.
Dark Disciple is an important book to read once you finish TCW. It's the first book to include some pretty major events occurring to some fairly big characters, and proved that Lucasfilm arent just saving all the big things for the movies.

Dude has a point. Whatever else George delivered on a captivating vision, an impressive diorama of the galaxy pre-Empire in which to encapsulate a story that was sadly lacking until TCWs helped patch it back together and fill it out.
It also pushed the boundaries of what was technically possible on the screen and created a revolution in effects technology that dominated the decade to come.
TFA, sadly, did neither. But it delivered on a story that people enjoyed, however much the plot points were surgically lifted from ANH. It's flawed yet serviceable. Let's hope they can keep going in a good direction.

For the people that like Kylo Ren, one of the reasons why people like him is because we never had a villain that struggled with their dark and light side.
But isn't that Anakin's (and to some extent Luke's) journey? We especially see this in Anakin during RotS after he joins Palpatine, and later in Vader during ESB and RotJ.
Luke also displays this during RotJ with him finally embracing the light side after his duel but he was a hero so he doesn't count I guess.

1. What makes you think Luke would tell anyone about the Sith? Even Han, his close friend, didn't know the word Sith, only the Dark Side.
2. Why would anyone believe them? To someone who isn't intimate with the knowledge of the force, Jedi and Sith are the same thing. Plus it could just be seen as some New Republic propaganda to demonize the old regime.

But even if you exclude Ep.1, one of the very first things Anakin does in Ep.2 is jumping into a miles-deep abyss full of fast-moving objects because he just Force-sensed that this will allow him to land on Zam's speeder and catch her. My guess is that the Empire spent twenty years destroying or locking away every evidence proving the Jedi's existence. And in the current run of Star Wars comics, we see a Hutt crimelord who's a Jedi fanboy and collects every artefact (lightsabers, holocrons...) he can put his hand on, which is apparently illegal.
Luke's failed tentative to recreate the Jedi order must not have been enough to counter the Empire's still vivid propaganda.
