Apocalypse is a celestial plant to encourage and to a certain extent force evolution, Eternals are a race created by celestials to protect a race and perserve evolution. So I feel like the races could have some interesting interaction, but Thanos threw all that shit out the window and could give very few fucks about earth besides the fact its heroe's manage to stop his shit more often than anyone else in the galaxy.
So I would say the main way they would interact would be Thanos annihilating the planet and Apocalypse praising him on only the strong survive, then murder battle.

Seed is a Celestial artifact given to every future successor to the Apocalypse position. It first turns you into a Horseman of Death, the first among the Horsemen of Apocalypse and, when Apoc is killed (or deemed unworthy I suppose) it turns the Horseman of Death into the next Apocalypse.
In Remender's "Uncanny Avengers" Sentry was resurrected by the Apocalypse Twins (who made 4 Horseman of Death, after killing a Celestial Gardener and taking Seeds by force - Banshee, Daken and Grim Reaper) using the Death Seed. By default that, after the defeat of Apoc Twins, should make him a successor. He even refers to himself as "Future Apocalypse" and "caretaker of mankind" during the run.

You know I kind of thought people just didn't understand what Apocalypse's power is supposed to be when they have him job. But they actually say the power right there. If that actually held true, it would be almost impossible to stop Apocalypse - he can shift to gain new mutant powers or celestial technology, so he could adapt to overcome anything you threw at him. It'd be extremely difficult to affect the integrity of his body in any way.

This. It took a long time for Black Bolt to heal and return to full strength. His brother even made some sort of healing chamber for him.
That said, Thanos has taken cosmic cube blasts to the face and shit so I wouldn't rule him out as stronger. At the same time though Apocalypse has always been weakened somehow whenever the X-Men have fought him so I can't really imagine what he's like at full power.
