A weirdly high percentage of people went in expecting something exactly like either Steven Universe or Gravity Falls in terms of plot/continuity, and even though this show was shown to have both, they still reacted to episodes just meant for humor as though they were absolute shit.
The long spaces between episodes airing also helped people build up unrealistic expectations. You'd have people bitching about lack of character development for Marco's crush by like the 4th episode.
Of course if people just don't like the humor, that's fine, but it's weird how it's so often judged for not doing things exactly like other cartoons.

It's not, because her whole character design is based around having visible eyebrows.
You can't just erase them, you need to re-design the face or it loses 60% of its expressiveness.
If I were to criticize, I'd say it's lazy to use eyebrows, everyone always does that.
But inventing new ways to express emotions on a face was too tiresome or too hard of a task for the designer, so they just did it.
When they found out the eyebrows wouldn't be always visible, they had two choices: change the design to make them visible (more work and thought! Ugh!) or just do like animu and make the necessary lines visible through ANYTHING for the sake of a standard, codified way of emoting.

I haven't watched the show yet, but the entire "uber-powerful quirky animesque beautiful sparkly magical princess from another dimension who saves the world and is beloved by everyone" premise just screams wish fulfillment and Mary Sue to me. Please, tell me I'm wrong and the show is actually good, the art style's cute and I like the designs of secondary characters (the protagonist looks like Deviantart came to life, though, but I can get used to it if she is an interesting character).

She's kind of a violent dork and sometimes comes off as stupid. Lots of kids at the school love her, probably because of her magic though, and one rich popular bitch doesn't, but that only comes up in about 3 half-episodes. For the most part the show seems to express "Isn't Star a weirdo?"

It's kind of a subversion of that. She starts out very idealized and sueish but as the show goes on you see her 'quirkyness' and charm there's a deep facade and that quirk actually goes to the extent that she's a pretty messed up and weird person underneath. Than she loses her magic/wand by the season 1 finale and is taken down a peg, her descent from seeming like a carbon-copy wish-fulfillment character into one more grounded and deeply flawed is actually interesting to watch.
Her relationship with Marco is the same way, since he starts out seeing her like you described but each twist and bit of tension serves to coldly detach him from that image.
I'd say it's a lot like "Scott Pilgrim" in terms of tone and expectations, you expect a quicky magical girl loli comedy with wish fulfillment but get something kind of bittersweet instead.

Toffee's introduction gave me hope, then the finale came and I was happy, then they pulled that lame ass deux ex machina, and then I lost hope again. Yeah yeah, "potential" but Steven Universe for example also started off weak but they acomplished much more in 1 season than Star VS did. Star Vs might become reach "fine" level, but I doubt it will be the next big thing. The sole reason I even picked it up is because waifu.
