I'm pretty sure Em's semblance is more teleportation-like. Would make sense for a pickpocket, and also clears up some weirdness in her fight in the doubles round (getting out of the savannah grass, merc appearing from above, just going poof in the trees, gets right behind coco).

After the CocoYats fight there were two dominant theories for what exactly happened.
1) Neo did it. A valid possibility since her abilities have been vaguely defined as illusions with no specific bounds or limits. She wasn't seen at all during the fight and is working with them, so why not.
2) Emmy did it. Less accepted, but it would shapeshifting would be a logical Semblance for a thief to have; and she did have some Aura lost at the end of the match despite taking no hits, so that could be from Semblance use.
These theories carried on over to this fight with a third "Merc did it" theory joining them.

I like how expressive the characters have been this season overall. Although sometimes during the fight scenes I've noticed characters having totally flat :| faces when they've been like, punching the shit out of someone and it's kinda weird. I think this is kind of true.. The whole hallucinations thing might have something to do with his attacks. Mercury's attacks for whatever reason creates a ton of smoke/dust/whatever. Which is pretty unique to them. Nobody else's attacks do that.. right?
It's worth noting that mercury itself is not poisonous/causes hallucinations. Erethism (AKA Mad Hatter's disease) is caused when a person inhales/is exposed to by-products of mercury. Like the smoke/steam it emits when it's heated or something similar.
tl;dr: Mercury-based hallucinations occur when people inhale smoke/steam/anything that comes out of the mercury. Mercury's attacks causes a large amount of smoke. Coincidence?
