I think she's one of the best characters in the Star Wars series.
We actually see her train and grow up within the Jedi order. The only other character that we've seen do that is Anakin. We get to see actual progression in her character from being an immature padawan to now, a strong Jedi warrior. She might not call herself a Jedi anymore, but she really does embody the best the Order had to give.
Ahsoka is the only person who trained under Anakin at his best, before his corruption and fall. Ahsoka, in a way, represents that part of Anakin that was still good and still had integrity. She really was the only person to be trained by Anakin, which is more than can be said about Luke. Luke didn't even know his father, and met him only at the end of his life. He never saw the type of person that Anakin was before Vader, the relationships he had, and the good deeds he did.
With Anakin, Ahsoka learned how to think independently which is more than can be said about her fellow Jedi. Which is why, intuitively, she felt the corruption of the Jedi Order and left just before its downfall.
You could even say that she is technically a padawan of Obi-Wan also which was the ideal Jedi knight. So she represents both Anakin and Obi-Wan at their best at being Jedi.
I really hope they don't kill her off because to kill her off would be to kill one of few good things we see come out of the Jedi Order that remain.

Pazaak is actually pretty simple to learn and play. It's basically just a slightly modified version of blackjack. For starters it's 20 to win instead of 21. Personally I didn't mind Ashoka. I just hated her episodes since everything just "worked out" for her. I mean she would fight Greivous, a guy who kills Jedi for sport and got away. She just had this aura of invincibility that pissed me off. But herself as a character was interesting and she offered a good counter to anakin.
But personally, I liked the clone focused episodes the most.
