The reason Aang didn't fall for Toph is because he mistook Katara's caring for love and because Toph was completely unfeminine. But Aang was better friends with Toph than he was with Katara. You'd assume that a male Katara wouldn't be as warm towards strangers and a male Toph would be just as macho and someone Aang could get a crush on. Toph and aang are closer in age and character, so it would be very possible.

Single-character genderswaps are much easier to plot out and make work logically without having to consider (or ignore) how the vast majority of society would be different.

I'd say it depends on the property, with Avatar it can work either way, with a lot of the less serious cartoons it often is better to only have singular characters, or a small group of characters get gender bent, as the Dexter and South Park stuff that gets brought up in these threads shows, also generally Male to Female TG works better than Female to Male TG on both a visual design and personality level, so I'd say avoid the latter unless you're doing an "Everyone gets Genderbent" AU
