Y'all are dumb fucks. The gems literally come from a society without sexual reproduction, where everybody is the same "gender". Think about it, in a society where everybody is the same, there wouldn't even be a concept of gender in the first place. Gems wouldn't think of themselves as being female gems since they don't have any male gems to compare themselves to. They just happen to align with human perception of female, and so they go with that for convenience.
I guess one problem with that is why the homeworld gems instantly know to go by female pronouns, but I suppose a better question is why the homeworld gems instantly know to speak English in the first place.

What if one of them meets a human later and it's revealed that the gems are speaking in their own language, but Steven can subconsciously understand them because he's part gem?
The writers seem to like lampshading old cliches, so I wouldn't be surprised if this was the case. Or they might just make a joke about it and leave it at that.
