How much better would this episode have been if the bubble was subtle, making the characters unsure of what was reality and what was fiction? If the conflict was about not wanting to grow up and let go instead of a tacky, obviously fake playpen that would get old real quick? If Mabel had to choose to "grow up" and leave/destroy the bubble herself, rather than having Dipper do all the work again?
Imagine an episode where the bubble is Mabel's endless summer, and the Dipper is pretty much the same as our Dipper, except he doesn't want to stay with Ford. Imagine if Mabel had to tear her dream Dipper and her happiness apart with her own two hands, knowing that she might be saying goodbye to Dipper, if not now, than someday as they grow up and inevitably have their own lives.

Actually, I just realized the episode would have been much better even if everything stayed the same, but they explored Mabel's feelings more. If she and Dipper had a moment, like, "Even if we stop Bill, if we go out there, eventually we'll grow apart like Stan and Ford. But here, we can be Mystery Twins forever."
Instead the conflict wasn't about growing apart like they hinted in AToTS or growing up vs. not growing up. Ir's "it's better to have silly talking animals than boring reality" and there's no weight to anything that happens in the episode.

Exactly. None of the characters has to grow at all and they aren't explored. Even if it's cliche, it would have been a great opportunity for characterization to have at least some conflict and struggle there.
Having them all know right away it's not real and waltz out of there made the entire bubble plot seem like a pointless diversion, you could cut it without effecting anything. Notice that Mabel and Dipper didn't even talk about the Ford apprentice ship in the bubble. Instead, once they got out, she just said she was ok with it and Dipper immediately abandoned the idea. The fact that Mabel was ok with replacing Dipper with someone who was nothing like him also cheapened the concern with that situation in the first place. It seemed like Mabel's real problem with Dipper is that he isn't "radical and totally awesome" enough, not that he was leaving. If they'd had fantasy Dipper talk about how he would never leave her, that would have actually addressed the issue, but it didn't.

My production theory:
>Alex plans for three seasons
>Completes S1 as intended while fleshing out S2
>Incomplete outline for S3
>S1 production takes a toll on his soul
>decides to compress S2 and S3 into one season, as well as finish the series off entirely with a movie
>manages to squish S2 down to eleven episodes, becoming the first half of S2
But assuming that Alex never had a fleshed-out S3, which he likely would have done during the production of S2, he could only more or less use his basic outline of events. Furthermore, the movie was never given the go-ahead, so Alex was forced to incorporate it into the series itself by means of a multi-part series finale.
So that's twenty episodes of Seasons 2 and 3 each (40 episodes total) compressed into ten or eleven episodes each, minus three or four episodes in Season 3 to make way for the movie.
Or something like that. But what I'm trying to get at is that if the latter half of Season Two feels underwhelming, it's entirely possible that it's because of the compression of a story that wasn't even entirely there.

Basically. I don't hate Alex at all but I think he and possibly others working on the show just wanted to get it over with. So they rushed and slapped together the last, compressed season.
Life happens, it's a business, there are practical constraints, I understand.
I just feel sad that we could have gotten much better payoffs from the character arcs, plot, and mysteries if it hadn't been squished and rushed.
NWHS, NMM, DaMvtF, and a few other episodes really show what the series could do and was capable of. Some of this was great television. And now, the resolution the series has been building towards the whole time is underwhelming, that tends to leave a sour taste about what came before.

Dipper never really wanted to Ford's apprentice, at least not for long. He was excited at first, until he realized he wouldn't have Mabel, and quickly grew uncomfortable as Ford started projecting his own issues with Stan (isn't it suffocating?) onto his and Mabel's relationship. Ford thought people like Stan and Mabel only held "special people" like him and Dipper back. Dipper only said yes because he didn't want to upset Ford, but he was already reconsidering it by the end of the episode.
Ford pressured and manipulated Dipper into agreeing to be the successor of his "legacy", but that would mean growing up without mutual support from Mabel. Being his apprentice was never Dipper's dream, it was Ford's.

For a fair number of people, this episode killed a lot of hype.
It did for me. I was super hyped, but now I tend to imagine the finale will also feel like an incredibly low stakes episode with shallow characterization. I also doubt any of the mysteries will amount to anything or be resolved.
I'm expecting Bill to get defeated in a very asspull, lame way, partially because Bill is retarded, not because any of the other characters are clever and heroic. I expect the Stan and Ford wrap up to get 30 seconds tops. I expect the episode will waste time on Wendip yet again.

Yeah, Dippy Fresh was something that really needed expanding upon. Like, the very thought of Mabel creating a "more-agreeable" version of her brother is a bit disturbing, not to mention the other people she created such as the teenagers, Soos' father, and another Wendy.
But there's also the notion that the world of Mabeland itself created those people, as evidenced by Mabel's line about how some things are created before you even know you want it, and Bill and Dipper's remarks about how the entire bubble is nothing but a trap.
I'd suggest that in the writing process, it was agreed that Mabeland would be its own living entity, not one of sight or of sound but of mind. But in the actual final script, that idea failed to come out fully. We got tastes of it, like the breakdown of Mabeland after the trial, but no concrete evidence that Mabel was never fully in control and that everything was naught but a distraction, presumably to keep her occupied while Bill wreaked havoc outside, and eventually to unceremoniously take her new world away from her and throw her to Gideon after everything was done.

I thought the idea Mabel would have a replacement Dipper in her bubble made perfect sense. I think it's pretty common for kids to selfishly want the people around them to behave differently. I remember wishing I could wake up one day and find my siblings were suddenly nicer to me. Maybe that was because we fought more than the average family, but I recall having those thoughts often. The ethical ramifications of magically forcing those people to change tend to go over your average kid's head.
And besides, she'd been in that bubble for four days. Considering all this was brought on by a fear of her brother leaving her, it would be stranger if there wasn't a DoppelDipper in a world where she has everything she wants.
