Guys, Dipper didn't actually want what would come with Ford's apprenticeship. It was too much of an extreme. I don't know why this surprises you when the way Ford operates and lives was never portrayed as a good thing. Dipper decided he didn't want that for good reason.
He never said he was abandoning his dreams, just that he decided he wanted to grow up with Mabel and see where things went from there. They both have to look hard at what they want and grow the hell up, but they decided to do it together. People are talking about Ford's apprenticeship like it was Dipper's dream and Dipper just confirmed, clearly of his own volition and not just because Mabel, that it's not really his dream.
Get over it. The way Ford lives sucks and his apprenticeship would do nothing but isolate Dipper and make him a destructive loser like Ford is.

Its an interesting parallel between the stand twins and the pines twins. At first dip was meant to be like Stanford, the mystery master with a mind of iron, and mable like granule stan, a goofball with charisma. But here in the latter eps it appears thing are more backwards. With Stanford saying things like “I wish I was more like you when I was younger” to dipper in the saucer scene. and mable being more methodical in the unicorn ep.
it appears the pines twins are more of a miss mash of both of the older towns younger selves. and the older twin appear to have converged more as well.
