Plus, Gideon just tried to kill the twins a fe episodes ago - all Pacifica ever did was be a bitch.
Also, all Pacifica had to do was pull a lever, Gideon is breaking a demon deal with the forces of Hell that have just conquered the world.
I think Gideon's "redemption arc" would be fine if they'd given it some time though...and it is just a cartoon. Another thing that got compressed by the Season 2 and Season 3 squish, probably. So we get episode after episode of "duurrr I luv you Wendy" and a few minutes for this major Gideon heel turn.
You also get zero time to resolve Stan and Ford's relationship and Bill has a whole miniboss squad that appears out of nowhere at the last minute.

I think it was pretty reasonable that Gideon ally himself with Bill. That being said I think him going against Bil wasn't crazy. I mean Dipper was right, it's not like Mabel is ever gonna just start liking Gideon if she's locked up. Plus Gideon has to know deep down that Bill is no good for anyone.
Maybe it was a little rushed but it's a 30 minute cartoon show, I can forgive it. It made for an entertaining and funny chase scene and felt natural enough.

I think Gideon is just fine and Bill is actually a really great villain, in concept and sometimes execution, but that he's hard to pull off well.
