I like Gravity Falls, but I find the setting, lore and characters more interesting. I just like weird fantasy and sci-fi settings. In terms of design I really love the backgrounds of SU and the overall screwy and minimalistic design of AT.

Don't really know what you mean exactly. If you mean structural depth than both GF and AT have a lore spanning across dimensions of space and time and it's rather hard to compare. But I don't see how that would make one or the other better. OTGW has pretty simple lore but it's still a great setting and series in general.
If you meant thematic depth, then I don't think any of them really have that, maybe SU to some degree. But still pales in comparison to Aeon Flux or the Maxx and not to mention several other titles from different media on that chart.
I can agree that GF is a bit more balanced and polished than AT (and a bit more than SU, not more than OTGW). But my favorite episodes, characters, lore and setting elements I find a lot more compelling, interesting and impactful than most of what GF has to offer, even though these series might have their flaws and weaker points.
