Jess isn't a perfect clone.
She was artificially grown with an X chromosome in place of the Y.
This was after Peter got his powers when they sampled his DNA, so Jess would have them too.
Also, as an "imperfect" (female) clone, Jess would have a female stature and biology - hence her brain.
She also had hypnotherapy from Ultimate Madame Web to falsely implant Peter's Memories in her.
Memory is NOT genetic, so there's no reason why she would even have Peter's sexual preferences, even with his memories falsely implanted into her.
