Because since it's Uncle Grandpa, it's easy to believe that he can just cross into other shows the same way he can do those 4th wall jokes. Plus his character is mainly about helping kids, so Steven can fit as his kid of the day. As weird as the worlds of Regular Show or Gumball are, I don't think the characters are weird enough to be able to suddenly go to a different world.
Plus expectations would probably be a lot higher if it was a crossover with a show like Adventure Time and Steven Universe.

Generator Rex was just a clusterfuck of half backed ideas in my opinion. The character designs were also kind of stupid looking, especially how Rex's transformations looked like Legos.
I suppose the crossover itself sounds like a good idea since the shows were kind of similar. Shame such a well matched crossover had to be wasted on two awful Shows though.
