Bending was basically worthless by the finale. Every robot was made of platinum anti-bending alloys or some retarded nonsense. From square one that "platinum is pure" shit didn't make a lot of practical sense. Even if platinum were stupid abundant in the Avatar universe, it's still absurdly heavy and not that great of a structural material.
Imagining that industry could boom as a direct result of metal bending making it easier to produce innovations like the printing press or the assembly lines is perfectly believable - though they took it way too far. However, if metal bending doesn't work on platinum, how the fuck did they build a fifty foot robot out of the stuff?
The fact that it's immune to bending means that traditional forging and metal working would be required, let alone the insane level of engineering you'd need to make that thing work. I mean, it was able to correct its balance better than a human and it exhibited zero signs of yield stress when it was getting banged with giant pieces of concrete. No deformation, nothing.
The Last Airbender showed us that they were on the verge of having tanks. They were using light vehicles that were armored. Then they skipped over that technology and went straight to outlandish steampunk. Then they jumped to cyberpunk, but with spirit vines instead of nuclear fission.

I kinda like the idea of the Earth Avatar being a dude in the somewhat chaotic Earth Federation just trying to make a life for himself and his family, but he's married and bringing up two kids by the time it's discovered he's the Avatar, which understandably throws kind of a wrench into the unambitious but comfortable plans he'd made for a peaceful life with his wife and kids.
It might be especially funny if the bending masters the new Avatar has to learn from are younger than he is, and rather than the least mature of the ensemble, the Avatar is the one with the most life experience and the least bending experience acting as a straight man to his mentors' young people problems.
No real ideas for how villains would continue to manifest, though. I feel like eventually people would acknowledge plans that require defeating the Avatar have never worked out for anyone in history, ever, and stop trying to do so.

This is the first avatar that would be born without several hundred lifetimes of bending experience encoded into his soul, after all, so the prodigal manifestations in Aang and Korra followed by the loss of all the past lives might mean the next Avatar doesn't feel the same instinctive attunement with other elements until he starts to train in them.
