Yeeeah, I don't see that. Luke's level of training (in a combat sense) was like between the younglings from TCW and Kanan. There's no fucking way that Luke could be on Vader's level within the span of five fucking years when Anakin took ten to be even more powerful and skilled than Luke at ROTJ.
Yeah, I admit the whole limitations of the 80s, but only to a certain extent. I rationalize it as that Luke had a piss-poor bare-bones training. He vastly lacked the more refined points of lightsaber combat and matters of the force.
But yeah, Luke and Vader were by no means equal in power or skill. I'd argue that Luke in TFA is still nowhere near as Vader's level.

Unlikely. I think you and other people underestimate Luke in RotJ, but either way it's clear enough that Luke is something of a prodigy given his relatively rapid growth. I'd assume it's probably sort of like what Roan Shryne thought in Dark Lord: The Rise of Darth Vader. He figured that Dooku must've had a Sith apprentice who betrayed him, defected to the Republic, and convinced Palpatine to turn the Republic into the Empire.
Of course, he was working under the assumption that Vader was Dooku's apprentice, and Ahsoka would obviously know that wasn't the case... But she would still have no reason to suspect that ol' Sheev himself is the Sith Master unless she was maybe told so by someone like Obi-Wan or Yoda.
It isn't too much of a stretch to think that someone like Ventress or Savage is secretly running the Empire, and using Palpatine as a puppet. I mean, hell, that's what Maul did on Mandalore... The "Importance" rating is only if you care about stuff that actually impacts/influences the franchise as a whole. (World building, bridging the gap to the new movies, important character deaths or development, ect)
If you don't care about that stuff and just want an entertaining story, then go with the ones that are higher rated.
Not listed in this guide (yet) is Lost Stars, a "Young Adult" book, but widely regarded as one of the best Canon books thus far. So I recommend that to you as well.

Aftermath is widely agreed to be the worst Canon book so far. It has a very awkward writing style, but it's biggest crime is that honestly, not much happens. At all.
Rakata Prime, Malachor, Star Maps, and almost Revan back in the Mortis arc. I'm excited to see how they approach that era, whenever they get around to it

Yes. TCW is very much the start of the rebooted Canon, and thankfully, its huge budget meant we got to see so many planets and cultures, and different models of each species.
We've seen fat trandoshans who scavenged instead of hunted. We've seen that not all Toydarians are sleazy salesmen like Watto. We've seen Twi'leks that aren't slave dancers, ect, ect.
The only species that seem to be bound to 1 role that I can think of, are Hutt's being a huge crime family, and Weequay being criminals/pirates (which Battlefront of all things just fixed, by adding in Rebel Weequay in the latest free patch)
So yeah, for the most part, the new Canon material has absolutely fixed that EU cliche of entire species being represented by one character.

As for Sheev, he was rather adamant about keeping his Sith status a relatively well guarded secret. She could have learned from Bail at some point but that is also assuming Yoda actually told him, he may not have actually learned anything.

Hutts suffer from their species design originating from being just a design for Jabba. Because of that, the entire design centers around being a pretty obvious fat, immobile slug visual metaphor for individuals who don't need to physically move to exercise power. I think it's just been hard for people to come up with ways to use the hutts that don't feel silly, given how they look.
You don't have to have crime lords be the only profession that fits into, though. Maybe jobs require little movement, not all of them moral reprehensible. Grakkus also adds a different dimension to it, as Hutts can now be physically powerful as well.

In Lost Stars, the history books blame Mace Windu for starting the war.
Considering Palpatine blamed the Jedi Order for trying to overthrow the government (Which, to be fair, they did. Even if it was for noble reasons), maybe after the war the Empire's propaganda downplayed the separatists exaction (maybe not those from some leaders who couldn't defend themself as they were dead likz Dooku, though. He was an ex-Jedi after all) and made the act of the Jedi seemingly worse.
There was also a reference to some holodrama (i.e. movies) depicting noble hero pursued by corrupt republican agents, by the way.
