you gotta do three things.
1. pay more attention when you're cooking
2. spray pam
3. when you clean it, get EVERYTHING off of it without scratching it. the inside has to stay 100% clean and sctatch free. the scratches will make it impossible to clean and then it will always burn and stick.

I use a teflon pan for shit i KNOW is going to stick and be a pain in the ass. Aluminum for mostly everything. Cast iron pan for shit like steak and roasts, or if i make a pit fire i can just throw the fucker in it and not have to worry about damaging it.

any cheap, all-steel pan. professional kitchens use these things and throw them away when they wear out. no plastic means you can heat them to absurd temperatures and throw em in the oven.

You're probably not heating it up enough. Stainless steel is great for anything you want browned and is fine for sauteeing too.

1. Heat pan until it's actually hot
2. Add oil, wait for oil to get hot
3. Add protein
4. don't touch it until it loosens by itself

Aluminum is supposedly unhealthy to cook in unless it's one of these ceramic coated pans.

Simple carbon steel is nice too, really cheap and doesn't retain heat so much so it's easy to adjust cooking temperature.

I want to be able to toss but cast iron is too heavy for that. I have a crappy stainless steel pan right now for that but I'm going to go for something a bit thicker. Looking at stainless steel or regular steel mostly.

If you have a gas stove you could just get a carbon steel wok. They're dirt cheap and awesome once they're seasoned.

Tramontina try-ply series. A 10in fry pan is $30 at walmart. Its got the aluminum core all the way up the sides. Easily on par with all clad. I prefer the handles on the tramontina desu

Everyone seems to use whatever those pans are on youtube these days, with the fucking red circle and netted pattern. I don't know what the fuck those are.

My current favorite pan is the fucking mineral b.

They're 15 usd tefal nonstick pans, they'll last a year then it's time to throw them away.

They look like the pans cooking with dog, and a bunch of other YT cooks use, but I've never actually seen them in stores (and I go kitchen shopping as a hobby, US).

I'm doing carbon steel for now, and when I have the money I'm going for bronze.

The nonstick coatings are all the same anyway, I used to go through a lot of pans because I lived with idiotic roommates and didn't notice a difference between brands.
