History. You had a nomadic cuisine that was big on lamb, goat, yogurt and cheese, along with an agricultural cuisine similar to Mediterranean. Then you had the Spice Trade. Then you had the rise of a fancy court cuisine for the Ottomans. By that point Turkish cooks were world famous. Then by the second half of the 20th Century they find themselves the most cosmopolitan country in the Muslim world, and develop a rich street food culture.
