I want to make this as a topping for ramen so I bought some soybean sprouts but they all have large heads on the end of them, and I've never seen that in ramen before. Do I cut them off?

you bought sprouted sprouts. Your palette wont notice the difference. If you go to the asian market look at the sprouts. there's actually quite a few varieties to choose from and each has their own place at the table. from soups, stews, salads or stirfry..
I'm going to use some pickled sprouts and cabbage on fish tacos tomorrow night.

It depends. You'll end up with a smushy bean like texture. If you want; remove the yellow heads. Pulverize them to make a liquid and mix it in your broth.
