I really like butter chicken, daal, papri chat, vegetable pakoras and samosas. However I am extremely picky about where I eat Indian food. A lot of the kitchens are dirty and chefs lack hygiene. I always feel like shit after it and get liquid brown tsunami out my ass unless I go to certain more expensive/better quality Indian restaurants.

My opinion is that as good as it tastes, it doesn't look very good, so doesn't do well on an image board. It's a bunch of bowls of slop with different spice blends, so without being able to taste (or at least smell) it, it just looks like bowls of slop.

I also don't like when they leave whole spices in the dish that aren't meant to be eaten. In first world countries we've engineered our fruit not to have seeds anymore, why can't India use cheesecloth baggies or something so that I'm not biting down on a whole cardamom pod or a fucking clove every other bite?

I actually never got the shits after Indian food, however I feel there's a very big gap when it comes to the quality of the food. I always thought it was pretty meh until I actually ate it at a good restaurant, after that it became one of my absolute favourites.

i like to know theyve used whole spices, it takes more skill to put the flavours together and tastes way better than some generic curry powder in a can.

I like pakoras & samosas, served with whatever kind of chutney (cilantro, tamarind, mango,etc).

I don't understand people who binge at buffets. How do you even? Especially with Indian food, there's a limit to how much rich, creamy, garlicky, gingery food I can eat before I start to feel sick. The point of the buffet is that you can try a little of everything you want, rather than have a set meal. It's not a license to kill yourself via food.

Some foods I can see binging on. Salty snacks, provided you have a sufficient supply of water or beverages, are easy to overdo. But how the fuck do you binge on curry? Or General Tso's and sesame chicken? I can't fucking do it.

And I'm fucking fat, too. I won't pretend otherwise. I drink a lot and I don't exercise outside of work. I just don't understand how binge eating works.

If anyone here hasn't tried Indian pickles, please do. I ordered them for the first time with my dinner while out the other night. Full meal with a couple chicken dishes, rice, naan, a veggie, and some chutney, as usual. But adding the pickles enhanced it even further. They're quite strong, but adding a bit brought an entire dimension that I had been missing. Highly recommend it for any co/ck/s who like strong flavors.

Definitely try out some tandoori chicken if you have not. It's basic and something of a beginner staple for Indian food, with the red seasoning mix on the chicken and the tandoori oven, it should be nice and dark red with some charring. Served with fresh onion, lemon, and cilantro, it's very pleasantly flavorful for a dish that isn't particularly saucy.

The word curry is a bit nebulous, so I'm not sure what you mean exactly, but if the wetness is the issue, aloo gobhi is another dish that you will probably find tasty.

I feel this. I used to enjoy it, like when I was a growing kid. Now that I'm a grown ass adult, I don't have any desire to stuff myself. I've been on a diet and now I can't even finish regular restaurant portions, actually irritates me how much we gear towards massive plates.

Well, when I think of pickles in general, there are two flavors that come to mind, which are bright and sour. Not all are bright, and not all are terribly sour, but they're usually one or the other or somewhere in between. Of course they're salty too.

These Indian pickles are salty, and they do bring some brightness and a little sourness, but compared to most pickles which just have the sour/salty thing going on, these are heavily-spiced with cardamom and other shit that is in the food. This gives them definitely something of an earthy/bitter taste. On its own I probably wouldn't enjoy it much, and I don't think a lot of Americans would like it at all. But I found that when taken in small bits along with the rest of the food that it was really quite tasty. The place I go to serves a small side of them for $2, and it was a perfect portion for one meal.

Paneer is sold in all the grocery stores near me, and I don't even live in an Indian area. Try looking for it by the farmers cheese or ricotta, fresh cheeses

Ok. What's the bestest vegetarian curry recipe? I'm looking for something a bit special ad it's for a special occasion. Usually I do a slow cooked pork vindaloo..... but my gf is now vegetarian.

Links to recipes that you have experience with would be wonderful.

I made this at the weekend. I'd probably double the Garam masala measure next time and add more parika cumin and chilli. Very tasty though. My only regret was the immersion blender tends to leave sauces with a crunchy consistency. Would do in a bigger blender next time

Used to have the same problem but now I use halloumi instead. First I marinate it and then I let it simmer in the stew for like 10 or 15 minutes in the end. Same texture.

I love Indian food, but I'm especially hooked on chaat. I like getting different kinds of Indian snacks and creating my own little smorgasbord.

But, I also love full dishes too. My favorite is Baigan Bhartha, but I love Goat Vindaloo, Lamb Rogan Josh, Butter Chicken, Sag Paneer, Navaratan Korma, Mali Kofta, Fish Masala, Chicken Methi and Biryani of any kind. Delicious.

And then, let's not forget the naan and paratha to go with all that.

I'm craving this naan from a buffet place. it was amazing. garlic cilantro, burned but just the lightest touch of burnt in that naan way.
