This channel is so fucking comfy
>>

>wearing a costume
>annoying voice and way of speaking
>takes place out of a kitchen for show value even though it'd be easier for both the producers and the audience if it just took place in a kitchen
yuck
chefsteps is where it's at

I agree. Its really cool to see how people cooked in the 18th century. I kinda want a dutch oven
>>
>>7827145
The channel/show is literally for historical reenactors, of course he's going to be in costume. It's like watching porn and complaining the characters are naked and fucking.

The fried chicken recipe from the channel (most viewed video, went viral recently) is really good. The verjus gives it a very unique flavor.
>>
>>7827143
I have mixed feelings about people cooking like this but it's good that the channel itself exists.
>>
>>7827143
I like his fried chicken video
>>
>>7827197
>>7827593
I don't get it, it's not really any different from his other videos.
>>
this guy looks like he's never scored.
>>
>>7827205
I know some /out/ists like to use some of his recipes that have a practical value
>>
>>7827614
he has a daughter in some of his videos. He's just a nice, gentle family man.

Not loving all the hate on this guy, he's genuinely nice.
>>
>>7827609
Excluding 'go 'za memes, this might be the worst post I've ever seen on 4chan.
>>
Someone mentioned in an earlier thread about this guide spreading false information as truth. Does anyone know what the deal with that is? I thought the recipe was interesting, I've never seen a batter made with that heavy of an egg to flour ratio.
>>
>>7827167
Nah, it's like watching porn, being upset when they zoom in on the guys face, and then being told "If you didn't want us zooming in on the guy's face, why wouldn't you just watch something without guys in it"
Like it's hard to argue with that logic, but it doesn't mean that it has to be that way
>>
I tried making the mushroom ketchup but I went overboard on salt, it's still good sparingly on meat cuts though

It's fried and it's chicken. Of course it'd spread faster.

That's just stupid. Then again, most people are.

i like him too. seems like his aim is more about dishes from the chefs employed in households. he's always cooking famous meals served to washington and diplomats and the like. OPs guy seems to be more aimed at the ways the common man ate daily. it's nice to get a well rounded view of how people ate, from rich to poor.

>WHY ARE THEY ZOOMING IN ON THE GUY'S FACE?

This is for 18th century historical reenactors. If you go to the channel page it has a video for colonial hat care and maintenance. Would you prefer a fedora video? A baseball cap video? This is not a standard cooking show. Half of the point is the costumes and locations. They aren't going to do a historical reenaction in a modern kitchen with contemporary clothes. I'm sure there are other series from other channels that cook old recipes in modern kitchens with contemporary clothes for you. I don't even care about historical reenactments, I (and judging from the views many others) just like this series because, as OP said, it's comfy as fuck.

Have you been to his restaurant in Philepdelphia? The food was pretty good but the beer was awesome. It was brewed according to the real recipes they found from the journals and notes of real founding fathers.

Shit nigga, just discovered this and I have to say it is comfy af

Agreed, nice post

The food isn't really the focus, but It's interesting to see how they cooked
>>
>>7827145
nigga shut your fuckin mouth. Go watch Ja/ck/ videos or something
>>
>>7831199
why do people even care about that guy?
I'm on /co/ more often than here and /co/ loves talking about shit they hate incessantly, but I never thought /ck/ would be a place where that happens

I could've sworn PBS had a similar cooking show where they made colonial food.

>what I want to see

"...take your bucket and place it directly under the pig. Then, using a sharp knife, slice the neck from ear to ear. Remember, you want to catch as much of blood in the bucket as possible."

I don't think it really fits his style. Even if the bucket is an authentic replica from his store.
>>
>>7827143
I coincidentally found out about this channel yesterday. I glad other people are enjoying it too. I'd love to see more historical cooking videos from different cultures.

That daughter is maximum overcute. If I was even half as cute as that bonnet wearing 9 year old I'd die happy.
>>
>>7827642
Do people really autism about weather or not recipes are authenticly historical? we're lucky we can even approximate cooking from that far back. It doesn't have to be perfect.
>>
>>7831722

Depends on the point of the discussion.

In general I don't give a shit if a dish is cooked to a "historically accurate" recipe. I just want it to taste good. But if the claim is being made that X is historical, but isn't, that's a different issue altogether.
>>
>>7831732
Fact checking isn't easy. I don't see any reason to throw up your hands in disgust that not every recipe is to the exact standards of yesteryear.
>>
>>7831738

I don't see a reason for it either. I wasn't complaining, I was just answering >>7831722's question.

In his Q&A videos he sounds like he doesn't read the questions beforehand and do research or prepare. I don't know if that's the way he actually does it or if it's just the way he talks, maybe he's reading a script someone else wrote, but sometimes it sounds like his answers are complete conjecture.
>>
>>7827145
>chefsteps
lmao
>>
>>7831207
In my view, it's because he is such a fucking cartoon. His videos are mostly recipes of slop (both ingredient quality and final product), he constantly makes mistakes that even beginners to cooking would learn to fix quickly, and to top it off there is no irony at all in his videos. He really thinks stuff like Aunt Myrna's party cheese salad and that bean-mayo abomination are good eating.

It's like watching an automobile accident followed by an explosion followed by gang rape. You can't look away, even though you are horrified.
