Was gifted a coho salmon fillet, how do I prepare it what's the best way? Guy who gave it to me said brown sugar and maple syrup with salt and pepper and some lime in tin foil? Also is it really that good?

Onto all sides...
- Brush on lemon vinaigrette (3:1 oil:lemon juice).
- Sprinkle with hella Mrs. Dash.
- Sprinkle with hella Parmesan (dat cellulose is OK, too).
- Sprinkle with smoked salt to taste.

- Bake en papillote at 325F until thickest part hits 125-130F. About 20-25 minutes.
- Remove from oven.
- Turn on broiler or crank oven to max heat.
- Unwrap papillote and place salmon back into oven until browned to taste (but pull out before albumin leaks).

- Combine 1/4C sour cream or plain Greek yogurt, 1/4C mayonnaise (Kewpie is good, too), 1/4-1/2C Parmesan, juice of 1 lemon, 1 clove garlic minced, 1/2t chili powder.
- Serve sauce with salmon, along with diced scallions, tomatoes, cucumber, avocado, corn, extra lemon juice to taste.

To be fair, there's a pretty big difference "meuniere" and "salmon cooked in butter", but your point stands.
