Can't go wrong with a nice Tomatillo Avocado Salsa.
-2 avocados
-5 medium tomatillos
-1 cup of cilantro
-2 jalapenos and 1 serrano( whole for spicy, seeded for mild)
-2 garlic cloves
-1/2 cup of milk
-salt to taste(I like to use adobo)
Boil the peppers, garlic, tomatillos for no more than 5 min, anything else and the flavors will go bland. Add to a blender
with rest of ingredients, blend to a smooth consistency.
Pairs nicely with carne asada, tacos at pastor especially, just about anything.

I just mix fresh cut sweet corn, avocado cubes, tomatoes, tomatillos, jalapeno, garlic, red onion, black beans, cilantro, and whatever other produce that I have laying around, and douse in lime juice and salt. No recipe really, just a good way to get some more produce into the diet and make other dishes (e.g., dirty rice) taste fresher.

It's really quite hard to fuck up fresh salsa from a taste perspective, unless you overseason.
What is salsa, really? Tomato, onion, cilantro, lime juice, salt? All sorts of stuff goes well with that.

I make basically this same recipe all the time, but I use a couple of different things and a different method. Crema instead of milk, 6 tomatillos, about 1/3 of a white onion, and 2 serranos. And I roast the peppers, onion, garlic, and tomatillos.
