What are the most veggie friendly international cuisines?
I'm a veggiefag myself and in my experience it's been Indian, Italian, Greek, Mexican, Lebanese/Egyptian/Syrian (all pretty much the same), Chinese and Thai. Spanish is okay as well.

Depends what kind of cuisine. Portuguese, for example, has a huge emphasis on fish and pork, and not many restaurants I know of do vegetarian main courses.

Granted it would be an exaggeration to say that fish sauce is in every dish...but it's really really common in Thai cooking. It's downright essential in the typical dishes you'd expect at a Thai takeaway. Hearing about a Thai place that doesn't use it is honestly just as shocking as an Italian place not having pasta. It's ridiculous.

try moroccan cuisine, also dishes like el salvardorian popusa can be eaten vegetarien or vegan. But my choice would probably be more in the route of indian/pakistan/nepalese.
