Surely you've noticed how the juices that run from a piece of fresh meat don't resemble bood, right? The juice that runs out of a raw steak before you cook it is transparent whereas blood is opaque. It also has a radically different viscosity. Surely this is evident, yes?

It varies from butcher to butcher or by commercial producer but some seem common to most.

Salt, black/white pepper, nutmeg, mace, onion powder, dried thyme, dried sage, ground coriander are all very common. But the flavour profile tends towards the peppery end in a similar fashion to bangers or haggis.

That's along with oats and/or pearl barely, onions, lots of back fat and the blood of course

In Poland we have Kaszanka (https://en.wikipedia.org/wiki/Kaszanka) which is a black pudding sausage with kasza (https://en.wikipedia.org/wiki/Kasha) which are groats added to it. It's amazing both hot and cold.

The concept of eating it for breakfast like the Brits do is a little weird though. I find breakfast food should have more mellow flavours and blood sausage is quite strong.

Blood has to have blood cells, homies. That's what makes it "blood" and not "interstitial fluid" or "plasma" or "lymph". Meat juice has some proteins in it that give it a reddish hue, but no erythrocytes or leukocytes; therefore, it is not blood.

Anyway, black pudding is great. I'm fond of a good morcilla too, with toast and pickled red onion. Blood sausage usually has a texture like good chocolate cake, but with a rich, meaty flavor. It's A+ for just about any meal of the day.
