I'm a line chef at a pretty trendy spot in my town, my executive chef was on Iron Chef America... We have cured egg yolks on our menu that we make in house. We use it on a grilled asparagus appetizer with raisin agrodolce with green garlic. We grate the cured egg yolk over the asparagus and agrodolce, a nice heavy coating. It has a rich, buttery flavor.

If you want to be a real mofo, our go to scooby snack has been a small scoop of Robuchon potatoes, sunny side up egg, fresh cracked black pepper, and a little cured egg yolk, maybe some pickled ramps.
